cooking with mickey

i’ve posted before that the moroccan pavilion restaurants at epcot center meets the LFS*. so thanks to eric of mouseguest.com, i recieved the recipe for the delicious couscous served in the restaurants and i think perhaps at the previous incarnation of tusker house at the animal kingdom. the recipe is as follows:

Couscous salad

Restaurant Marrakesh

Morocco

Epcot

yield 4 servings

ingredients:

1/2 red onion

1 tsp. chopped garlic

1/2 each green and red bell pepper

1/2 chopped zucchini

1/2 cup olive oil

1/4 cup raisins

1/4 cup garbonzo beans

1 cup orange juice

12 oz. cooked plain couscous

2 tbs. chopped fresh parsley

1/2 cup tangerine segments

salt, pepper, nutmeg and cinnamon to taste

in large non-stick skillet, saute onion, garlic, peppers and zucchini in olive oil. season with salt, pepper, cinnamon and nutmeg.

add olive oil to veggies along with raisins, garbonzo beans and orange juice.

toss vegetable mixture with couscous and pan juices.

add parsley and fold in citrus segments.

serve and enjoy! now i doubled the recipe, didn’t have any green peppers, used the amount of oil for one batch to make two and had to guesstimate the spices – but it was a success, something i will definitely make again.

    that look yummy and i am not into couscous.

    I do have an idea for you though you should blog or do a “Cats” segment on what meets the LFS* and why.

    it was so yummy, i ate it all in like a week of non-stop coucous-a-go-go! now i’ll need to remake it and see if corn does go with everything (but my people call it maize).
